Research/ Consultation
Major area of R&D after 1995 were as follows:
· Meat and poultry meat product development with emphasis on healthful meat products looking into replacing synthetic food additives in meat products with phytochemicals-extracts of herbs and spices are tested for effectiveness as antioxidants and antimicrobial and extension of quality and shelf life of the products.
· Collaboration with MPOB, Carotino Bhd, Cargill Corporation Bhd. And Soon Soon Oils Bhd. and meat poultry processing companies like Dinding Poultry Processing and Om Corp Deli Bhd. resulted in the publication of many scientific and technical papers (Refer to lists of updated publications)
· Meat training courses conducted by Deparment of Veterinary Services of the Institut Pengurusan Veterinar over the years 2001-2006. Lately specialized meat product development courses were held in UKM in the small meat laboratory. Over 90 people-veterinary assistants, agriculture assistants, entrepreneurs and industry people were trained in the past 5 years. (Refer to lists of updated publications)
Regional Networking
· The contact person for the Meat Scientists International Conference for ASEAN region. Every year ICOMST is held for 4 days in selected countries where meat industry is a major player. Malaysia is not in the list of over 35 countries that look turn to organize the meeting where over 500 meat scientists from all over gatherd.
· Has been representing Malaysia in this specialized area of Meat Science and Technology. Was also the contact person for China Meat Research Centre (CMRC), Beijing, where meat training courses were held every year for tarining young scientists from less developed countries. Was also an instructor to the CMRC meat course along with a few Chinese lecturers at the centre. This particular program had nutured our local technicians and graduates in meat courses and food analyses in the 1980’ and 90’.
· Frequently invited to deliver lectures in countries such as India, China, Thailand, Philipines, Brunei, and New Zealand.
